Recipe Carrot Soup

Ingredients:
3 tablespoons olive oil

1 medium onion, diced

1 teaspoon ginger, diced

2 garlic cloves, diced

1 teaspoon ground cumin

1 teaspoon ground coriander

Salt and Pepper

4 cups carrots, diced

4 cups vegetable stock

1 can coconut milk

Method:

  1. Put oil in large pot and cook onions until soft.
  2. Add garlic, ginger, cumin, coriander, S&P and cook 3-4 minutes.
  3. Add carrots and mix well.
  4. Pour in stock and coconut milk and let simmer until carrots are cooked.
  5. Allow to cool a little then blend until smooth
