Recipe – Kylie’s Sticky Date Pudding

I’m a sticky date pudding fan and have tried so many over my life. This is my version of deliciousness for you to give a try.

Ingredients

180g dates, chopped

250ml hot water

1 tsp baking soda

85g dairy-free butter

3 tbsp rice syrup

1 tsp vanilla

1 cup flour

100g walnuts, chopped

Method

  1. Preheat oven at 180 degrees.
  2. Place dates, hot water and baking soda in a pot and heat till boiling. Let boil for one minute then leave sitting in pot to cool.
  3. In a bowl cream butter, rice syrup and vanilla with a whisk.
  4. Add flour and walnuts to bowl, as well as date mix and stir altogether.
  5. Pour into a lined loaf tin and bake for 35mins.
  6. Enjoy as a dessert or a cake, either is yum!
