Recipe – Potato Bake (vegan)

What seems like an impossible dish to create vegan is made possible with a few substitutes. Get your hands on a jar of Wholly Chocomole dairy-free butter and get creating.

Ingredients:

  • 6 cups potatoes
  • 4 tbsp dairy-free butter
  • 4 tbsp flour
  • 3 cups oat milk (or your fav non-diary milk)
  • 1 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp fresh herbs
  • 2 tbsp dried herbs (do a mix of what you like)
  • 4 tbsp nutritional yeast

Method:

  • Peel and slice thinly the potatoes and set aside
  • In a pot melt the butter on low heat
  • Add the flour and whisk for a couple of mins
  • Pour in the milk and whisk, cook until it thickens
  • Add seasoning, herbs and nutritional yeast
  • In an oven proof dish place one layer of sliced potatoes then spoon over four heaped tablespoons of sauce and spread over
  • Reapeat until all ingredients used
  • Cover
  • Bake at 180 degrees for 30mins
  • Uncover and bake another 60mins
  • It makes plenty so invite a couple of friends over to enjoy
