Recipe – Pumpkin Soup

The weather has turned colder so it was pumpkin soup for dinner and it was so so good!
I roasted half a pumpkin the night before with some ground cumin on it.
Then tonight I fried up an onion, 3 garlic cloves and a carrot till soft.
Added 2 cups of vegetable stock, 1/4 cup coconut cream, 1/4 tsp dried chilli and S & P. Add chopped up pumpkin and heat through.
Put in blender and whiz till the smoothness you like😊🎃 Yum
